Salba Chia Tahini Zoodle Bowl
A great meal for a hot summer night and can be topped with any leftover veggies you have laying around the kitchen. If you don’t have a spiralizer on hand you can use a potato peeler, but the “zoodles” will resemble ribbon noodles vs spaghetti noodles.
For the Zoodle Bowl
- 2 – 3 medium to large zucchini & Yellow squash
- Spiralizer or potato peeler
- Shredded carrots
- Button mushrooms
- Cashews (for a nice crunch)
- Pomegranates (feel free to leave these out if they aren’t in season or too much work to prepare, we happened to have some left over from another recipe)
- Any other veggies you enjoy- We used leftover riced cauliflower, spinach and some veggie chips for a little more fun on flavors)
- 2 – 4 Tbs of Salba Chia (1 tbs sprinkled on each bowl or dish you are serving once the dressing is drizzled)
- Salt and pepper to taste
Cumin Tahini Dressing:
(makes 2/3 cups)
- 4 Tbs of Tahini
- 2 Tbs of lemon juice
- 1 Tbs of miso paste
- 1 tsp of ground cumin
- Salt and pepper to taste
