Crispy Muffin Tin Zoodles
- 2 Large Zucchinis
- 1 Tbsp of Coconut oil
- 1 Large Organic Egg
- 4 oz of Fresh Mozzarella drained and torn into small pieces
- Salt & Pepper to taste
- Fresh Crushed Garlic
- 3 Tbsp of Nutritional Yeast
- 3 Tbsp of Salba Chia
Directions
- Preheat oven to 375 F
- Coat muffin tin with coconut oil
- Wash zuchinni and make “zoodles” out of both place in bowl
- In a separate bowl mix egg, spices, salba, yeast, garlic.
- Add zoodles to mixture make sure they are coated well
- Coat muffin tin with coconut oil
- Pack Zoodle mixture into muffin tin cups
- Place Mozzarella cheese on each cup over the Zoodle mixture and bake for 15 – 20 minutes
** If you want to make these vegan, simply nix the egg and cheese. Use 2 Tbsp more of coconut oil and put into zoodle mixture with the rest of the ingredients (they wont stay together as well but will be equally delicious!)
