Kale Veggie Bowls
So easy and fun to top with unlimited options of roasted veggies!
Ingredients:
1 Bunch of organic kale de-stemmed and chopped up
2 cups of roasted veggies in Olive Oil, preferred herbs salt and pepper (We used Brussels sprouts, squash, red peppers, onions and sweet potatoes)
1 cup of veggie chips (Any brand works – It’s a great little crunch to the bowl)
4 tbsp. of Salba Chia Whole Seeds
½ cup of any cheese (optional – We used goats milk cheddar, vegan cheese would be fine as well)
Dressing of choice – We used Trader Joes creamy champagne vinaigrette
Directions
Massage chopped kale with dressing, let sit for 10 minutes to soften
Once veggies are cooled add to kale
Add shredded cheese, Salba Chia and Veggie Chips to the top and serve
