Sweet Potato & Broccolini Tacos
1 sweet potato (cut into bite size pieces)
1 package of broccolini (or one head of broccoli florets cut into bite size pieces)
2 Tbsp of coconut oil or olive oil
2 tsp ground cumin
¼ tsp salt
1 can of black beans (drained and rinsed)
4 oz of goat cheese (or vegan cheese) * optional
1 lime quartered
Chopped cilantro for garnish
2 Tbs of salba chia whole seeds
1 package of corn tortillas
Preheat oven to 425. On a large baking sheet toss vegetables with oil and seasoning. Roast for 25 – 35 minutes until soft and begin to slightly char. Mix in the beans and bake for a few more minutes until the mixture is warm. Once mixture is pulled from oven, sprinkle Salba Chia seeds across the top and mix.
Warm corn tortillas in a skillet flipping after 30 seconds. Fill corn tortillas with mixture and top with crumbled goat cheese; squeezed lime and cilantro garnish (hot sauce optional) Enjoy!
