Roasted Grape and Goat Cheese Crostini

2 cups of seedless red grapes

4 tbs of grapeseed oil or sunflower oil divided

1/8 tsp of salt

1/8 tsp of black pepper

1 small whole grain or gluten free baguette (or bread of choice)

3 Oz softened goat cheese

2 tbs of finely chopped rosemary or fresh thyme

1 tbs of lemon zest

4 tbs of Salba Chia





Preheat Oven to 425 F toss grapes with 2 tsp. oil, salt and black pepper. Arrange grapes in single layer on baking sheet. Roast until grapes have softened and darkened in color, 15 – 20 minutes


Reduce temperature to 350 F and Cut baguette into ½ in thick slices, place on baking sheets and brush tops with oil, bake for 5- 8 minutes until toasted


In a small bowl whisk together goat cheese, rosemary or thyme, Salba Chia and lemon zest.


To serve, spread goat cheese mixture on bread slices and top with the roasted grapes.
