Vegan Roasted Poblano Peppers

Vegan Roasted Poblano Peppers

 

This dish is a great appetizer or light meal for just about anyone. It’s easy to make and requires minimal effort. Not for those who don’t like a little heat 😉

 

 

Ingredients:

  • 6 medium or large fresh poblano pepers
  • 1 package of vegan ground beef or tempeh (we got ours from Trader Joes but most natural food stores carry it ** you will only need half the package for this recipe)
  • .5 oz of Salba Chia whole seeds (or 1 serving) set aside for garnish
  • 1/3 C of cooked peas
  • 2 tbs of vegan mozzarella (we used the Trader Joes Brand)

 

Instructions:

  • Place peppers on baking sheet drizzle very lightly with coconut oil and cook at 300 until they start to blister, turn peppers and blister/brown the other side
  • while peppers are roasting heat up vegan meat according to package instructions
  • Once peppers are roasted, let them cool slightly and peel or “skin” as best as possible, sprinkle the vegan meat the cooked peas and cheese across peppers –  stick back into oven for a few minutes to soften cheese
  • Once softened, sprinkle Salba Chia garnish across peppers, plate and enjoy!
