A great meal for a hot summer night and can be topped with any leftover veggies you have laying around the kitchen. If you don’t have a spiralizer on hand you can use a potato peeler, but the “zoodles” will resemble ribbon noodles vs spaghetti noodles.


For the Zoodle Bowl 

  • 2 – 3 medium to large zucchini & Yellow squash
  • Spiralizer or potato peeler
  • Shredded carrots
  • Button mushrooms
  • Cashews (for a nice crunch)
  • Pomegranates (feel free to leave these out if they aren’t in season or too much work to prepare, we happened to have some left over from another recipe)
  • Any other veggies you enjoy- We used leftover riced cauliflower, spinach and some veggie chips for a little more fun on flavors)
  • 2 – 4 Tbs of Salba Chia (1 tbs sprinkled on each bowl or dish you are serving once the dressing is drizzled)
  • Salt and pepper to taste

Cumin Tahini Dressing:

(makes 2/3 cups)

  • 4 Tbs of Tahini
  • 2 Tbs of lemon juice
  • 1 Tbs of miso paste
  • 1 tsp of ground cumin
  • Salt and pepper to taste
