Crispy Muffin Tin Zoodles



  • 2 Large Zucchinis
  • 1 Tbsp of Coconut oilSmallzoodle
  • 1 Large Organic Egg
  • 4 oz of Fresh Mozzarella drained and torn into small pieces
  • Salt & Pepper to taste
  • Fresh Crushed Garlic
  • 3 Tbsp of Nutritional Yeast
  • 3 Tbsp of Salba Chia


  • Preheat oven to 375 F
  • Coat muffin tin with coconut oil
  • Wash zuchinni and make “zoodles” out of both place in bowl
  • In a separate bowl mix egg, spices, salba, yeast, garlic.
  • Add zoodles to mixture make sure they are coated well
  • Coat muffin tin with coconut oil
  • Pack Zoodle mixture into muffin tin cups
  • Place Mozzarella cheese on each cup over the Zoodle mixture and bake for 15 – 20 minutes

** If you want to make these vegan, simply nix the egg and cheese. Use 2 Tbsp more of coconut oil and put into zoodle mixture with the rest of the ingredients (they wont stay together as well but will be equally delicious!)
